The established Sydney caterer and venue operator Doltone House will open a significant space within the $2 billion redevelopment of the Harbourside complex.

The complex sits beside Sydney’s convention centre, ICC Sydney, just in front of Sofitel Sydney Darling Harbour and across from W Sydney.

Doltone House Harbourside will offer 4,500m2 of flexible waterside event space, including floor-to-ceiling water views.

The largest space within Doltone House’s new venue will be able to host up to 1,250 attendees.

“This is a defining moment for our business and for the future of events in Australia,” said Doltone Hospitality Group’s executive chair, Paul Signorelli.

“Doltone House Harbourside represents our vision for benchmarking a world stage venue that is architecturally striking, technologically advanced and purpose-built to deliver extraordinary experiences at scale accompanied by our nationally acclaimed catering.

“We’re incredibly proud to bring this to market and invite our clients to be part of it from the very beginning.”

The venue is expected to open in the second half of 2027, with Doltone House taking bookings for the new event spaces already.

Founded in 1969 with a venue in Sylvania Waters in Sydney’s south, the Doltone House venue portfolio has greatly expanded over the last nearly 60 years. The group now operates multiple venues in and around the CBD, including on Elizabeth Street opposite Hyde Park and two along the wharves in Pyrmont.

In 2025, Doltone House was appointed operator of several event spaces within The Star Sydney’s complex, after The Star Entertainment Group sold its Event Centre to Foundation Theatres.

Doltone House also operates venues in Western Sydney and the Hunter Valley, in addition to its original venue in Sylvania Waters.
