Josh and Julie Niland of the acclaimed, three-hatted Sydney seafood restaurant Saint Peter will run the restaurant at the 59-room luxury hotel.

“We are delighted to welcome Josh and Julie’s family into ours as we embark on an exciting chapter for Hamilton Island.
“The Sundays marks the beginning of a bold food and beverage strategy, ensuring the island remains a must-visit destination for travellers seeking world-class dining and unforgettable experiences.”
Josh’s famed approach to using the whole fish will be brought to Hamilton Island but the restaurant will serve a wider range of cuisine than just seafood.
“Julie and I fell in love with the entire vision behind The Sundays,” he said
“It reflects so much of what we value – bringing people together to create memories in beautiful surroundings. We can’t wait to introduce a dining experience that feels connected to the island and its incredible natural environment.”
The Sundays has been built at the north end of Catseye Beach, with every room to feature either a balcony or a terrace. The property will also have its own private pool.
The hotel is similar in luxury to Beach Club and qualia elsewhere on Hamilton Island but is not adults only as these established properties are.
The Sundays will accept business event groups, with more information on the offering to be made available in the new year.
