The EVE opens in Sydney

Sydney’s newest hotel is now open with The EVE, a 102-room property, debuting at the intersection of Surry Hills and Redfern this week.

“The EVE is more than just a hotel stay — it’s a destination in itself where the guest experience is personalised and guests can immerse themselves in Sydney’s rich cultural scene,” said The EVE’s general manager, Ben Mellor.

The hotel will offer a rooftop pool and a Mexican restaurant from the Liquid and Larder team who also run the acclaimed Bistecca and The Gidley in Sydney’s CBD. Liquid and Larder are also helming the lobby bar at The EVE, Bar Julius.

The independent hotel, affiliated with TFE Hotels, sits within Wunderlich Lane, a redeveloped precinct also offering dining establishments and event spaces.

Event venue Saltbox, run by caterer Cook & Waiter, is expected to open in Wunderlich Lane in May, offering three spaces, with the largest able to host 250 for a seated dinner.  

Cook & Waiter will bring strong culinary credentials to the new spaces, with members of the team coming from lauded hospitality ventures including Bentley Restaurant Group, Tetsuya’s, Rockpool and Sixpenny.

Elsewhere in the precinct, there is Olympus Dining from the team behind The Apollo in Potts Point, noodle bar Island Radio with cocktail and wine offering Baptist St Rec. Club above it and Regina La Pizzeria.
