Rick Stein to open restaurant at upgraded Sydney hotel

Celebrity chef Rick Stein will open a flagship Australian restaurant in beachside Coogee.

The restaurant will be located within what was the Crowne Plaza Coogee Beach. The 210-room hotel is currently closed for major refurbishments as it transitions to the InterContinental brand.

Stein already has Australian culinary outposts at the luxury Bannisters properties in Mollymook and Port Stephens in regional New South Wales.

Salter Brothers, owners of the soon-to-be InterContinental in Coogee, purchased the Bannisters properties in late 2024.

“We are very excited to be bringing Rick Stein to Coogee Beach and build on our existing partnership,” said Salter Brothers managing director, Paul Salter.

“I can’t think of a better location in Sydney to showcase his distinctive, yet approachable, fresh seafood experience.”

Stein’s new 224-seat offering in Coogee will offer restaurant and bar dining as well as an outdoor terrace. The restaurant will serve up seafood caught off the NSW coast as well as the British fish and chips Stein is famous for. The restaurant will have spaces for groups and event groups in the wider hotel will be able to access Stein’s menu for their gatherings.

“There’s an abundance of top-quality seafood in Australia and we’ll be championing local, seasonal produce with the benefit of accessing the biggest fish market in the southern hemisphere,” said Stein.

“We’ll continue to utilise the relationships we’ve built in our regional locations to source that same produce in Sydney. It’s the best of both worlds.

“Coogee Beach is yet another stunning coastal location for our Australian restaurant portfolio – perched by the sea and full of the laid-back charm we’ve come to love so much here. 

“It’s especially meaningful for me as my wife Sas grew up in Sydney, so opening a restaurant in her hometown makes this venture all the more special for us both.” 

With the hotel expected to be closed until the end of September, Stein’s restaurant is set for a November opening in Coogee.

Salter Brothers recently committed to a major investment in its IHG branded properties, with a plan to convert three existing Crowne Plazas to the InterContinental brand and the current InterContinental Melbourne the Rialto into the Regent Melbourne.
