Marriott International launches culinary academy in Australia

The international hotel group is tackling Australia’s chef shortage with a two-year program that will see aspiring chefs work in-house alongside Marriott’s executive chefs.  

The apprenticeship model will combine direct instruction from executive chefs at Marriott properties around Australia with theory, delivered by registered training organisations across the country.

The Marriott Culinary Academy will include continuous mentorship and assessment, access to Marriott’s employee benefits and career opportunities at Marriott hotels and resorts in Australia and around the world.

Participants in the program will be paid at least $25.85 per hour, which is above a starting apprentice chef wage and will be provided with professional tools, knifes and uniforms paid for by Marriott.

Trainees who complete the course will receive a Certificate III in Commercial Cookery and a job offer from Marriott International.

Accommodation Australia applauded Marriott’s move to set up the academy.

“Chef shortages have been a structural long-term hindrance for the industry over many years,” said Accommodation Australia CEO, James Goodwin.

“The Marriott Culinary Academy is an industry-leading initiative that is well positioned to address this skills shortage and offers great potential to attract and retain talent.

“The program content and incentives offered under the program has the potential to attract an increased number of apprentices and retain them in the sector – providing financial security for businesses and their workforce.”

The academy is now accepting expressions of interest from school leavers, VET hospitality students, those seeking a career change and others interested in cheffing or hospitality to join the first iteration of the program.

Each of Marriott’s 33 properties in Australia will offer a place at the academy, with some larger hotels and resorts possibly taking more than one trainee.

The first cohort will begin with the Marriott Culinary Academy in February 2026.

There are plans to expand the academy more broadly in the region to New Zealand and the Pacific islands.
