Run by caterer Cook & Waiter, the venue will be located in the same precinct as the new property from TFE Hotels, The Eve. The 102-room hotel is scheduled to open this summer.
Saltbox will comprise three rooms, with the largest able to accommodate 250 attendees seated or 460 standing. The two smaller spaces can be used for private dining or as breakout rooms.
The Cook & Waiter crew will bring strong culinary credentials to the new spaces, with members of the team coming from acclaimed hospitality ventures including Bentley Restaurant Group, Tetsuya’s, Rockpool and Sixpenny.

The building itself features carbon neutral cross-laminated timber, raw surfaces, textured fabric and eco-friendly cork flooring which has favourable heat and acoustic properties.
According to Cook & Waiter’s head of sales and marketing, Jules Cameron, interest in the venue is already strong.
“Clients want more and that’s what we’ll give them,” said Cameron.
“Saltbox is the exclusive, standalone event venue at Wunderlich Lane; it’s a spectacular space worth waiting for and we’re already abuzz with enquiries for 2025.”
Besides Saltbox and The Eve, Wunderlich Lane will feature offerings from House Made Hospitality – who are also responsible for Sofitel Sydney Wentworth’s clutch of new hospitality venues – LuMi Dining and The Apollo and Gelato Messina.
The group behind restaurants like Bistecca and The Gidley, Liquid and Larder will helm the culinary offerings at The Eve.
