The age-old English high tea concept has had a modern Australian twist at Chifley Wollongong and now guests can enjoy the award-winning menu at the new Chiefly T Bar. The exclusive menu of gourmet canapés and sweets by executive chef Peter Washbourne took inspiration from Dilmah’s ‘Exceptional’ range of loose leaf teas and herbal infusions.
A submission to the Dilmah Professional High Tea Challenge, it was crowned the best for its exceptional tastes, quality and creativity. Chef Washbourne travelled to Sri Lanka with the CEO of Dilmah and has returned with many exotic influences that he is incorporating into his dishes. The special high tea is served from 11am until 2pm, Monday to Friday for $25 per person, and is a refined chance to debrief after a meeting or to have a brainstorming session with a difference. The menu could also be incorporated into a conference or breakout afternoon tea with a gourmet edge.

ready, steady, cook
A new and exciting Ready, Steady, Cook-inspired challenge sees teams working closely with the hotel’s award-winning chef. As staff chop, fry and plate-up dishes made from a random ingredient, they’ll be thrown into hot water when extra challenges are thrown in to add some spice to the competition. Team members have to think quickly, adapt to the new task and create dishes that are as appealing on the plate as they are on the palate.

The Chifley team can take over organisation of tickets for you and can also collaborate with the stadium to integrate activities such as meeting the stars or behind-the-scene tours.
